Located in the beautiful southwestern mountains of New Mexico at an elevation of 7,800 feet, the virtually untouched surroundings host elk, deer, black bear, antelope, mountain lions, wolves, turkeys and other small game. Family-Owned
Pearson Ranch has been in the meat snack business since 2000. The main focus of ranch operations shifted to meat snack products in the summer of 2011. Buffalo (Bison) products were introduced in 2003, and Venison and Wild Boar products added in 2014.
Wild Boar
Wild Boar, sometimes called feral swine, were introduced to America by the first European explorers. Now, they can be found in as many as 45 states but tend to stay in the southern part of the United States. Due to their popularity as a game meat, wild boar continues to spread.
Wild boar is much richer and more exciting in flavor than your typical pork. It is also leaner and has a better texture. It is high in iron, niacin, selenium, thiamin, vitamin B6, and zinc. It is low in sodium and has less cholesterol than traditional pork.
All wild boar products from Pearson Ranch Jerky is USDA approved. It is also low in fat, high in protein, MSG-free, gluten-free, soy-free, and does not have added nitrites.
Venison
Venison refers only to the meat of deer. It is an incredibly lean meat. Its flavor is sometimes likened to beef with subtle gamey notes. It can be so lean, that when it is simply ground for burgers, it is sometimes necessary to include bacon, olive oil, or cheese, or blended with beef to the mixture to improve texture.
Venison is comparable in protein, but lower in calories than most grass-fed beef, lamb, or pork. It tends to also have more moisture than these meats.
Venison is not consumed in the United States as commonly as meats like beef, lamb, and pork because of the stringent rules of the USDA and most of the meat comes from New Zealand and Tasmania. Our venison products are all USDA approved. It is also low in fat, high in protein, MSG-free, gluten-free, soy-free, and does not have added nitrites.
Buffalo
Buffalo, also known as bison, nearly went extinct in the late 19th century. Leap forward to 2007, and there were approximately 200,000 in the United States being raised for meat.
Buffalo meat is a deep red color due to the lack of fat marbling, and the taste is slightly sweeter and richer than beef. Buffalo spend their lives on grass, and are not subjected to questionable chemicals or hormones.
Nutritionally you are getting more protein and nutrients with less calories and fat. Buffalo is a dense meat that will satisfy even the heartiest of appetites while eating less.

Elk
Elk is a member of the deer family. They are bigger than deer and smaller than moose. Elk can be found in North America, Europe and Asia. Elk meat is very lean and finer-grained than beef. It is described as having a mild, sometimes sweet flavor. It is a great source of protein.
Elk meat is high in B-vitamin complex, which comes from the plants in an elk's diet. Domestic elk is free from steroids, hormones or growth antibiotics that can be found in domestic beef or pork. By eliminating the preservatives in the meat, elk provides an all-natural source of protein. Elk is higher than beef in omega-3 fatty acids and contains a full range of essential amino acids.

Surprisingly small for the price.
The sellers image of the product is innacurate. The packages of meat are tiny. They arent worth the money I spent on them. I bought them as a gift for my grandfather which I am now embarrassed to give him. Especially based on the other reviews I now read which say they arent good quality. Guess I learned my lesson about not reading reviews before purchasing items. I do not recommend this product. I paid almost $100 for these and the seller declared the value as $30 on the package.
